2GB of RAM is a good amount for a Teamspeak VPS. It will allow you to host a few servers without experiencing any lag or problems. If you are hosting a large number of servers or if your servers are very large, then you may need more RAM.
A 4 man Minecraft server should be able to run on 2GB of RAM, but more RAM is always recommended. This will allow your server to run more smoothly and prevent any lag or crashes. Minimums are never recommended.
2GB of RAM should be plenty for docker VPS. You can run a lot of containers on a small amount of resources if you're using Linux. Docker doesn't use that much memory, and the processes in the containers don't use any more than they would without the container.
2GB RAM should be sufficient for OpenVPN Server, but it depends on how many devices are connected and how much traffic is generated from each device. For every 150 connected devices, you should have at least 1GB of memory.
This is a difficult question to answer without knowing more about your specific use case. A VPS with 2GB of RAM will likely perform best with 1 or 2 vCPUs, but this may vary depending on the type of applications you are running.
